During this twelfth weekend of the year 2014, H and I are going to escape to his family cabin for a bit to hang out with his sister and her boyfriend. I can’t wait. It’s a bit of a belated celebration of H’s birthday, too – since we were so busy last weekend (which was his actual birthday), I am planning on cooking dinner for the four of us on Saturday night, along with baking some cookies and making some granola bars during the day. Yum!
Here is what I’m planning on making:
For dinner tonight: Chicken Enchilada Stuffed Peppers. I altered the recipe to make it a little easier (because I didn’t want to have to make my own enchilada sauce when there was some perfectly good stuff in cans at the grocery store). H and I have made these one other time, and they were delicious.
Cookies: Oatmeal Cranberry Chocolate Chunk Cookies. It says white chocolate in the title, but neither H nor I like white chocolate all that much, so we’re using dark chocolate instead. I am so excited about these.
Granola Bars: Nut Free Granola Bar Recipe. It’s hard to find granola bars that don’t have a peanut warning in the grocery store, so I thought we could make some. This is a generic recipe that we are going to add walnuts and dark chocolate chips to. And maybe Craisins, but I’m a little afraid that would make them too similar to the cookies. We shall see.
Plus, H is making chili, and his sister and her boyfriend made burgers for us last night. I can already tell it’s going to be a fun weekend. And I’m thinking that I might even turn my cell phone off. I can’t remember the last time I gave that thing a rest.
